In this video, I will show you how to make Cambodian chilli salt, a popular condiment that is used to spice up sour fruits such as mangoes, pineapples, and guavas. Cambodian chilli salt is made from ground dried or fresh chillies, salt, and sugar. It adds a delicious balance of heat, sweetness, and saltiness to the fruit. It is also easy to make at home with just a few ingredients.
To make Cambodian chilli salt, you will need:
- Dried or fresh red chillies
- Sea salt
- Rock sugar
- A food processor or blender
- A mortar and pestle or a rolling pin
The steps are:
1. Toast the dried chillies in a dry skillet over medium heat until they are fragrant and slightly darkened. Let them cool completely.
2. Transfer the chillies to a food processor or blender and pulse until they are finely ground. You can also use a mortar and pestle or a rolling pin to crush them.
3. Add the salt and sugar to the chilli powder and pulse again until well combined. You can adjust the ratio of salt, sugar, and chilli according to your taste preference.
4. Store the Cambodian chilli salt in an airtight container in a cool, dark place for up to 6 months.
To use the Cambodian chilli salt, simply sprinkle it over sliced or cubed sour fruits of your choice. You can also serve it in a small bowl as a dipping sauce for fruit skewers or toothpicks.
