Karanji or Gujiya is a deep fried dumpling filled with mixture of dried fruits, khoya (mawa) or grated coconuts. It is a specially made in India during festivals like Holi, Deepawali, Chhath and Teej. This is a healthier version of the snack as it is baked. Though this snack looks complicated to make, but it is actually quite simple. The Karanjis can be made and stored in airtight containers for 1 to 2 weeks. It goes perfectly with a cup of tea.
