Snow day shut in, so canned homemade chili. Big bargain grocery haul, rendering beef fat, Making doggie treats. This recipe came from the Blue Ball Book for canning.
The recipe as written:
5# ground beef
6 cups cooked tomatoes with juice
2 cups diced onions 1 1/2 Tablespoons salt
1/2 cup chili powder
1 red hot pepper
1 clove garlic
1 tsp. cumin seeds.
Combine and cook till warm throughout. Fill jars and process at 1 hour 15 min. for pints, 1 hour 30 min. for quarts.
These are the tweaks I made: I use my own home blend of salt and pepper. I used two cloves garlic. I used two jalapeno peppers, I adjusted the chili powder to include some cocoa. I used 2# cubed round steak and 3# ground beef. I added to taste: cinnamon, turmeric, cayenne pepper, . It was very good. Hope you try it and let me know any questions you may have.
