Teriyaki Salmon Poke Bowl | Easy, Healthy & Delicious Weeknight Dinner
This quick and flavorful Teriyaki Salmon Poke Bowl is the perfect healthy weeknight dinner that you can throw together in no time! Packed with protein, healthy fats, and fresh veggies, it’s a balanced meal that’s both nutritious and satisfying.
You can easily swap the salmon for chicken or tofu to suit your preference, and experiment with your favorite vegetables like cabbage, zucchini ribbons, or baby spinach for extra variety. I’ve used a little store-bought teriyaki sauce to keep this super simple, but I’ll link my homemade teriyaki sauce recipe in the comments for those who want to try it from scratch.
This recipe is great for anyone in Level 1, Phase 3 of the Transform Challenge. If you’re in Phases 1 or 2, use your meal builder guide for the rice portion.
Ingredients (Serves 2):
2 x 140g skinless salmon fillets
Drizzle of extra virgin olive oil
250g microwave rice (or 1 cup freshly cooked white/brown rice)
Sesame oil
1 spring onion
1 medium cucumber
1 cup grated carrot (approx 1 large carrot)
1/2 cup frozen shelled edamame beans
1/2 avocado
2-3 tablespoons teriyaki sauce
Sesame seeds and sliced spring onion to serve
Optional Toppings:
Crispy seaweed
Togarashi seasoning
Chilli
Steps:
Prep your veggies: chop cucumber, grate carrot, slice spring onion, and defrost edamame beans.
Cut salmon into 1.5cm pieces, season with salt and pepper, and cook on medium-high heat until golden.
Cook rice according to the package. Mix with a little sesame oil and spring onion for flavor.
Build your poke bowl: add rice, veggies, avocado, and salmon.
Drizzle with teriyaki sauce and top with sesame seeds & spring onion.
