Ingredients You'll Need:
Cherry syrup: 100 ml
Strong black coffee: 100 ml
Mascarpone: 400 grams
Cream (whipping or heavy cream): 100 ml
Caster sugar: 120-125 grams
Square sponge cake: 1
Cherries: Fresh or jarred
Sour cherry puree: 4-5 tablespoons
Process:
• Prepare the Coffee Cherry Syrup: Mix some cherry syrup with some strong black coffee in a bowl. Set aside.
• Prepare the Mascarpone Cream Mixture: In a separate vessel, add 400 grams of mascarpone. Add 100 ml of cream and 120-125 grams of caster sugar. Whip the mixture gently until smooth, using a blender, being careful not to over-whip to avoid splitting.
• Assemble the Layers in the Tray: Take a square sponge cake and slice it into fingers. Brush the bottom of a tray lightly with the coffee-cherry syrup mixture. Add a thin layer of cream.
• Layer the Sponge: Line the tray with the sponge cake fingers, ensuring they soak up the syrup mixture.
• Add Cherry Layers: Scatter some cherries (sliced into pieces) on top of the sponge layer. Drizzle 4-5 tablespoons of sour cherry puree evenly over the cherries.
• Repeat the Process: Add another layer of mascarpone mixture, spreading it evenly. Repeat the process with another layer of sponge cake fingers, soaked with the cherry-coffee syrup. Add another layer of mascarpone and top with some cherries.
• Serve and Enjoy: Black Forest Tiramisu is ready to be served. Garnish with extra cherries or cocoa powder if desired.
