Hi all! Sorry for sounding a bit raspy… I’m just coming off a pretty bad head cold. Anyway, here’s my low carb crab stuffed mushroom recipe with a lemon butter garlic sauce. This is a great tasting low carb appetizer or eat it as a meal all on its own. Each serving of four mushrooms is only 3.77g net carbs. Enjoy!

Stuffed mushrooms:
Mushroom plates [ Ссылка ]
24 baby bella/cremini mushrooms, about 16 ounces
8 ounces crab meat
2 ounces – cream cheese, softened
3 Tbs – sour cream
1/4 cup – grated parmesan cheese
1 tsp – minced garlic
1 Tbs – fresh chives, chopped
1/2 tsp – salt
1/2 tsp – ground black pepper

1/8 tsp – cayenne pepper
Toppinig:
1/2 cup – ground pork rinds
Sauce:
8 Tbs – unsalted butter (1 stick)
1 Tbs – fresh chives, chopped
1/2 Tbs – minced garlic
Juice of one lemon (about a 1/4 cup)
Serving size = 4 mushrooms (recipe divided by 6)
