Bhindi do pyaza Ingredients:
Bhindi 1 ½ cup
Onion chopped ½ cup
Onion diced ½ cup
Chopped tomato ½ cup
Mustard oil 4 tbsp for cooking & shallow frying
Jeera 1 tsp
Ginger & Garlic paste 1 tbsp
Green chilli chopped 1 tsp
Red chilli pwd 1 tsp
Turmeric pwd 1 tsp
Coriander pwd 1 tsp
Amchur pwd ½ tsp
Dahi 2 tbsp
Garam masala ½ tsp
Kasoori methi 1 tbsp
Salt ½ tbsp
Chopped coriander 1 tbsp
Method:
Shallow fried bhindi
Wash and clean bhindi. Dry it well.
Cut the bhindi into 1 inch pieces.
Heat some mustard oil and shallow fry for 5-6 mins.
Remove it on a plate and keep aside for further use.
Bhindi Do Pyaza
Heat mustard oil, add jeera, chopped onion and saute it.
Then add ginger & garlic paste and saute.
Later add red chilli pwd, turmeric pwd, coriander pwd, salt and some water.
Add the leftover oil used for frying bhindi.
Add chopped tomatoes and cook till it gets mashy.
Add dahi, stir and cook for 2-3 mins.
Then add diced onion and cook until it softens.
Add fried bhindi, amchur pwd, kasoori methi, chopped coriander, mix it and cook for 4-5 mins.
Bhindi do pyaza is ready.
Garnish it with chopped coriander and serve with naan/rotis
