Berbere African spice mix recipe. If you haven't tried African food before you really have to give it a go. The complex flavours tickle the taste buds like a tickling stick and with a huge range of dishes to choose from, everybody can find something to turn their heads - from vegan's to meat freaks, healthy eaters and diet cheaters, gluten intolerants to food trend followers.
You definitely need this Ethiopian spice blend in your cupboard if you want to discover the wonders of African cuisine and I've got you covered with this spice blend. There are a million different ways to make this and if you're outside Africa it's almost impossible to make a truly authentic blend. But that's ok, because you can make Berbere spice at home with spices that you can find in any supermarket -and the flavours in my Berbere spice mix have been tried and tested. This isn't just something that I cobbled together in a few minutes in my garage you know. I've put literally billions of years of research and testing into this. Real blood sweat and tears have gone into this. Honest.
Don't be intimidated by the sheer number of different spices in this Berbere blend. As I said in the video some are more important than others but you will get the best flavour by using all of them. You can even add some new ones and create your own blend using this mix as a base recipe to work from.
So below is the full Berbere spice mix recipe:
50g paprika powder - ESSENTIAL - A mild paprika powder although you can use a spicier one if you like.
2 tsps coriander powder - ESSENTIAL
1tsp cumin - ESSENTIAL
1 tsp sea salt - OPTIONAL - Salt isn't exactly necessary as you will salt any dish that you use this spice blend with but I reckon it helps bring everything together and offers an extra dimension.
1/4 tsp nutmeg - OPTIONAL
1/2 tsp ginger powder - OPTIONAL - Again, ginger is often used in dishes that use Berbere spice but the different flavour profile of ground ginger gives this mix another layer of flavour
1/4 tsp cinnamon - OPTIONAL
1 tsp garlic powder - OPTIONAL - Onion powder can also be used here. The smoky flavour of garlic and onion powder offer another layer of flavour.
1 tsp turmeric - ESSENTIAL - Although curry powder can be used in place of turmeric here
1 tsp peppercorns - ABSOLUTELY ESSENTIAL - Ground pepper can also be used of course
4 cardamom pods - ESSENTIAL - Cardamom powder is ok here. About 1/2 a tsp
1 tsp fenugreek - ESSENTIAL - But if you must, use curry powder instead
4 cloves - ABSOLUTELY ESSENTIAL - Where would we be without cloves eh? Disgusting if you have too many but get the perfect amount and it's one of the most important spices around.
Things I left out that can be used:
Chilli powder - Very important here - but as I make lots of different dishes with this and often make them for people very sensitive to spice, I tend to leave it out. Add 1 tsp for gentle heat, 2 tsps for a good burn and if you like things really spicy, add 3 tsps. Making this mix without chilli does take something away from it I have to admit so definitely add it here if you can tolerate it.
Basil and nigella seeds can be added to this mix as well as a whole host of traditional African spices that can be tricky to find in Western stores. The beauty of this Berbere mix is that it is flexible and can be adjusted to your own taste.
