CANTONESE WATERCRESS SOUP
Ingredients
2lbs watercress
1carrot
1kl porkbones
1pork tongue
handful Apricot kernel
2pcs dried Duck Gizzard
2pcs dried honey dates
1/2 dried tangerine peel
1tsp salt
4 1/2 ltrs to 5ltrs water
"Soak watercress in water for 20 mins.
Wash and drain.
Blanch pork tongue, pork bones and dried gizzard.Rinse.
Bring water to boil add all ingredients except WATERCRESS and salt. When water boil again put watercress and cook.
Simmer for 1 1/2hrs to 2hrs.
Put salt and ready to serve..
