Best Ever Taiwanese Chicken Poppers
Taiwanese Chicken Popcorns
Ingredients
Marinade
2 tbsp oyster sauce (you may use soy sauce)
1 tbsp shaoxing cooking wine
1 tbsp five spice powder
1 tbsp black and white pepper
4 tbsp water
500g chicken skin-on thigh fillet, cubed
1 egg, beaten
1 cup cornstarch (best if you can find tapioca flour or potato starch)
Oil for deep frying
1/2 cup basil leaves
Spice Mix Powder
1 tsp cayenne
1 tsp salt
1 tsp pepper
1 tsp chili powder (Sichuan peppercorn if you can find one)
Procedure
1. Mix the marinade ingredients in a small bowl: shaoxing cooking wine, oyster sauce, black and white pepper, five spice powder.
2. Pre-heat cooking oil in pan.
3. Pour the marinade and water into the chicken bowl and mix thoroughly.
4. Add in the egg. Mix again.
5. Roll each chicken cube into the cornstarch.
6. Fry each chicken piece until golden brown.
7. When the chicken pieces are done, fry the basil quickly. Turn off the heat.
8. Drain the oil from the chicken pieces and basil. Serve on a plate.
9. Make the spice mix powder by combining the ingredients. Sprinkle on the chicken.
