Separate 4 egg yolks and whip them with 50g sugar and a pinch of salt until they are fluffy and pale in color.
Bring 500ml milk to a simmer.
Slowly temper the milk into the egg yolk mixture by gradually adding a little at a time.
When a good portion of the milk is fully combined with the egg yolk mixture add vanilla and mix well.
When vanilla seeds are dispersed, take a spatula and consistently stir for 10-15 minutes in low heat to prevent curdling.
Do not boil. When the mixture coats the back of a spoon when you run your finger through it, kill the heat.
Prepare an ice water bath and strain the mixture through a fine mesh sieve in a bowl placed over it.
Add 1/2 tsp cinnamon, 1/4 tsp cloves, 1/2 tbsp ginger powder, 1 tsp ground nutmeg, and mix well.
Pour and mix in 100ml of heavy cream followed by 30ml of cognac or rum (adding alcohol is optional yet desired).
Store and serve as needed.
Strain the eggnog once again before serving to maximize its silkiness.
Top the eggnog with whipped cream or egg whites, more alcohol, cinnamon stick, or a pinch of nutmeg as desired.
