In short here's why overplanning will be your biggest problem, and a sure way to not have a good time in India:
1 India has it's own pace and timing. Things happen unexpectedly, and you have to have buffer free time to compensate for that. On top of that, sometimes the pace is lightening speed and sometimes a snails move. Leaving half of your itinerary open gives you a chance to adapt and adjust to the pace, because if you're expecting India to adjust to you you have a great sense of humour😂
2 India is so different than any other country in the world. The new scents, customs, foods etc will all wear you out in no time. You need time to process all the new things you see. If you don't plan that downtime, that's what's gonna get you overwhelmed in a jiffy.
3 Imagine the biggest food buffet you have ever seen. How does that usually end? Probably on the verge of gasping for air and a horizontal pose. Well India is one of the biggest buffets in the world for travel experiences. Except, here if you overindulge you're gonna get real cranky, with no patience, and just not making the most out of your time here. Pick less, enjoy more is the motto.
