Simon Shaw opened El Gato Negro in 2005. Last year the venue was awarded a Michelin Guide 2015 Bib Gourmand for the second year running, with El Gato Negro Manchester confirmed to launch this summer.
Simon’s love of Spanish produce and tradition has inspired a decade of both authentic and surprising tapas creations, delighting customers and impressing industry alike. He thrived in London as executive head chef to the prestigious Harvey Nichols Knightsbridge and will bring this breadth of professional experience as well as his personal passion for great Spanish food and wine to the North West with the launch of El Gato Negro Manchester in 2015.
