New entrant to the restaurant industry Lexi Monzeglio turned her passion for healthy plant-based food into a growing franchise, recently opening a third branch. The former food blogger and photographer is co-owner of Lexi’s Healthy Eatery, where she says they’re hoping to effect positive change in a sustainable, healthy way with a vegan menu.
