Matka Biryani Recipe:
Ingredients for chicken marination:
Chicken 1 kg
Yogurt 1 cup
Salt to taste
Turmeric 1 tsp
Red chili powder 1 tbsp
Garam masala 1/4 tsp
Green chilies (chopped) 2 tbsp
Oil 1 tbsp
Ingredients for gravy:
Oil 2 tbsp
Tomato puree 1 cup
Onion 1 & 1/2 cup
Ginger garlic paste 1 tbsp
Cumin powder 1/2 tbsp
Coriander powder 1/2 tbsp
Bay leaf 1
Red chili flakes 2 tbsp
Black cardamom 2
Cinnamon stick 1/2 inch
Cloves 8-9
Star anise 2
Nutmeg 1
Mace 1/4 tsp
Ingredients for rice:
Guard Basmati Rice 2 cups
Cinnamon stick 1/2 inch
Star anise 2
Bay leaf 1
Oil 1 tbsp
Salt to taste
Ingredients for layering:
Green coriander as required
Mint leaves as required
Lemon slices as required
Onion fried as required
Green chilies as required
Directions for marination:
In a bowl add chicken, yogurt, salt, turmeric, red chili powder, garam masala powder, green chilies and oil.
Mix all these ingredients well and marinate chicken for 15 to 20 minutes.
Direction for gravy:
Heat oil in a pan, add onion and cook until translucent. Add ginger garlic paste, whole spices, bay leaf and mix well.
Add tomato puree, chili flakes, cumin powder, coriander powder and cook for 3 to 4 minutes.
Add marinated chicken in it and cook for 8 to 10 minutes. Until chicken in 80% cooked.
Directions for rice:
Soak Guard Basmati rice for 25 minutes. Set aside.
Simmer water in a pan, add salt, oil, cinnamon stick, star anise, cloves and bay leaf.
Lastly add soaked rice and boil them until 80% cooked. Set aside.
Directions for layering:
Take a clay pot (matka) spread chicken gravy layer in bottom; cover it with a layer of rice.
Repeat the same layering process; lastly top it with lemon slices, green chilies, coriander, mint leaves and fried onion.
Drizzle yellow food color (dissolved in water) on top, cover clay pot with foil paper.
Heat up the coals and cook biryani on it for about 10 minutes.
Your delicious matka biryani is ready to serve.

چاول بنانے کے اجزاء:

دارچینی آدھا انچ

لیئرنگ کے اجزاء:
سبز دھنیا حسبِ ضرورت
پودینے کے پتے حسبِ ضرورت
لیموں کے سلائس حسبِ ضرورت
تلا ہوا پیاز حسبِ ضرورت
سبز مرچیں حسبِ ضرورت
چکن میرینیشن ترکیب:
ایک باؤل میں چکن، دہی، نمک، ہلدی، لال مرچ پاؤڈر، گرم مصالحہ پاؤڈر، سبز مرچیں اور کھانے کا تیل ڈال کر اچھی طرح مکس کرکے چکن کو پندرہ سے بیس منٹ،میرینیٹ کے لئے رکھ دیں۔
گریوی بنانے کی ترکیب:
ایک پین میں کھانے کا تیل گرم کرکے اس میں پیاز، ادرک لہسن پیسٹ، ثابت مصالحے اور کڑی پتا ڈال کراچھی طرح مکس کریں۔
اب اس میں پسے ہوئے ٹماٹر، کٹی لال مرچیں، ذیرہ پاؤڈر اور دھنیا پاؤڈر ڈال کر تین سے چار منٹ پکائیں۔
پھر اس میں میرینیٹ کیا ہوا چکن ڈالیں اور آٹھ سے دس منٹ پکائیں جب تک چکن اسی فیصد پک جائے۔
چاول بنانے کی ترکیب:
Guard Basmati Rice پچیس منٹ بھگو کر رکھ دیں اور سائیڈ پر رکھ دیں۔
اب ایک پین میں پانی ڈال کر ابلنے دیں اور اس میں نمک، کھانے کا تیل، دارچینی، بادیان، لونگ، کڑی پتا اور بھگوئے ہوئے چاول ڈال کر اسی فیصد پکنے تک پکائیں۔
لیئرنگ ترکیب:
ایک مٹکا لیں اس میں گریوی پھیلا کر چاولوں کی تہہ لگا دیں۔
اب دوبارہ گریوی ڈال کر چالوں کی تہہ لگائیں۔
پھر آخر میں اس پر لیموں کے سلائس، سبز مرچیں، دھنیا، پودینے کے پتے اور تلا ہوا پیاز ڈالیں۔
اب اس پر پیلا کھانے کا رنگ ڈال کر فوائل پیپر سے ڈھک دیں۔
پھر کوئلوں کو گرم کرکے اس پر دس منٹ تک بریانی پکائیں۔
