Ingredients:
- 2 tbsp olive oil or butter
- 1 medium onion, diced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1.5 lbs (700g) chicken thighs or breasts (bone-in or boneless). I cooked mine in the oven
- 8 cups (2L) chicken stock or broth
- 1 bay leaf
- 1 tsp dried thyme (or fresh sprigs)
- 1 tsp dried parsley (or fresh parsley, chopped)
- Salt and pepper, to taste
- 2 cups egg noodles (or any pasta of choice) I used tagliatelle
- any veg (optional)
- Fresh lemon juice (optional)
- Fresh parsley for garnish
Stores in the fridge 3 days - freeze 3 months
