The Perfect Chutney
Ingredients
6 bullet chilies
4 long green chillies
Mint leaves
1 ½ bunch of coriander leaves
½ Tomato
½ Onion
6 Cloves of garlic
2 Green Mangoes (if you cannot get these substitute with mango powder)
Spices
1 tbsp. Chilli flakes
1 heaped teaspoon of Anardana (pomegranate powder)
1 tbsp. of timber (If you cannot get this add ½ teaspoon each of mango and pomegranate powder)
1 1/2 tbsp. coriander
3 tbsp. Salt
2 tbsp. of Mango Powder (if you have the green mango then only put in a tsp of this powder)
15 ml of lemon juice (Then add to taste after all the ingredients are mixed in check the tang and add lemon juice accordingly)
15 ml water to help the mixing jug mix all the ingredients
Method
1. Cut up everything and put it in the jug (Not the spices)
2. Add lemon juice and water and then blits
3. From time to time stop the machine, press the ingredients down to allow the mixer to mix everything
4. Once made into a chunky paste add in the spices and give it another two blits
5. Taste the chutney and add salt and lemon juice to your own taste if needed
6. Put them all into little sauce pots that I collect and allow them to freeze, defrosting as and when needed thus allowing the colour and ingredients to stay fresh when ever you need to mix it into another chutney
7. If wanting to make yoghurt chutney add one tub (which contains 1 ½ tbsp. of the chutney ) into ½ tub of yoghurt
