Perhaps you've visited Mother's Restaurant in New Orleans and eaten a Debris Po-Boy! Are you ready to learn how to make one at home? This episode serves two purposes. First you will learn how easy it is to make a pot roast and secondly, you'll see how to make a Debris Po-Boy.
Pick up a 2-3 pound roast, cut of your choice, at your local grocery store. I used a sirloin tip however eye of round or shoulder roast will work great. For the cost of one po-boy in a restaurant, I bought a beautiful roast. Talk about a GREAT savings and this recipe will yield 4-6 sandwiches.
Ingredients:
~ 2-3 pound roast
~ 2 TBP Olive Oil
~ 1 TBP minced garlic
~ Salt & Pepper to taste
~ 1 loaf of French bread
~1 onion, diced
~ baby carrots
~ 5 potatoes, peeled & cubed
~ 2 stalks of celery, cleaned and diced
~ 1/2 cup red wine
~ 2 TBP of tomato paste
~ 2 TBP of all purpose flour
~ 2 bay leaves
~ a couple of sprigs of fresh thyme
~ 2-3 cups of chicken or beef stock
Preheat your oven to 350, cook for 2 1/2 to 3 hours
