Sauerkraut Salad
1 quart Kraut (drained)
3/4 cup onion (chopped)
3/4 cup celery (chopped)
1-4oz jar diced pimentos (juice and all)
1cup sugar
1/2 cup canola or vegetable oil
1/2 white vinegar
In a medium bowl pour in first 4 ingredients and set aside. In a small sauce pan heat sugar, oil and vinegar just until sugar is dissolved. Then pour over kraut mixture and stir well. Refrigerated for at least 4 hours or overnight and then enjoy.
