Cocoa Cotton Sponge Cake
(tang mian method)
可可棉花海綿蛋糕 (燙麵法)
8" square cake pan
8寸方形蛋糕模具
Ingredients 材料
(A)
① 60g vegetable oil 植物油
② 100g cake flour 低筋麵粉
③ 20g cocoa powder 可可粉
④ 80g full cream milk
全脂牛奶
⑤ 6 egg yolks 蛋黃
⑥ a pinch of salt 一點鹽
(B)
① 6 egg whites 蛋白
② 100g granulated sugar 細砂糖
Preheat 120℃ (water bath)
Bake at 120℃ 65mins (water bath)
Continue bake at 180℃ 15mins
預熱 120℃ (水浴法)
烤 120℃ 65分鐘 (水浴法)
調高熱度 180℃ 繼續烤15分鐘
Baking time may vary depending on the accuracy and type of oven.
烘烤時間可能因烤箱類型而異。
