Video Cooking Demonstration and recipe for Passionfruit Cheesecake with Mango, a No Bake Recipe made in the Thermochef. We think our family favourite may just become your favourite too. This creamy chilled fruity dessert is made with seasonal fresh fruits and rich Marscapone Cheese. It's economical, delicious, easy as pie and made in under half an hour, plus a couple of hours for chilling. We hope you enjoy it.
INGREDIENTS:
For the crumb crust:
300 grams ginger biscuits
130 grams melted butter
For the filling:
250 grams Marscapone Cheese
400 grams Sweetened Condensed Milk
25 grams powdered gelatine dissolved in 30 grams of boiling water
120 grams of fresh passionfruit pulp
50 grams of lime juice
Top with Slivers sliced from 2 large fresh mango cheeks.
METHOD:
Blitz the biscuits on highest speed for a couple of bursts to pulverise and add melted butter mix for a few seconds to combine and press very firmly into a greased 28 cm Pie Flan. Refrigerate while you prepare the filling.
For the Filling:
Place marscapone cheese and condensed milk into jug for 1 minute on speed 7.
Add Dissolved gelatine and lime juice 30 seconds speed 3.
Add Passionfruit Pulp Speed 2 20 seconds.
Pour into chilled Flan Case and refrigerate a couple of hours until set.
Decorate with thinly sliced slivers of mango which have been fold and dropped onto the top like ribbons. Slice and serve with cream and extra passionfruit pulp, or icecream if desired.
