Chickpeas and Spinach Curry
Chickpea spinach curry is tasty and healthy dish. This is a very easy and relatively fast recipe. This is a vegetarian and a vegan dish. Can it get any better than this?!
Ingredients
3 tbsp sunflower oil
1 large onion finely chopped
7 cloves garlic, crushed
2cm ginger, finely grated
1 tbsp dried coriander
2cm turmeric
1/2 tbsp cumin
1/4 - 1/2 tbsp cayenne pepper
500g tomato puree
500g cooked chickpeas
200ml vegetable stock or water
200g frozen spinach
1 tsbp salt
1 tbsp sugar
1 tbsp garam masala
50ml lemon juice(fresh)
200ml fat coconut cream
Preparation
Step 1: Heat the oil in a large pan;
Step 2: Add and stir the chopped onion until golden;
Step 3: Add the smashed garlic and the ginger and cook for a few minutes;
Step 4: Pour the following ingredients (coriander, turmeric, cumin, garam masala and cayenne) and fry for 3 min, mixing all the time;
Step 5: Add the crushed tomatoes, chickpeas and water/vegetable stock;
Step 6: Put the mixture from Step 5 to boil for 20 min stirring all the time;
Step 7: Add the salt, the sugar, and the spinach.Leave them a few minutes to boil;
Step 8: Add the lemon juice and coconut milk and stir again and again.
The dish is best served warm together with some fresh baked Naan Bread!
