How I smoke freshly court tuna on a cheap alcohol stove smoker.
Additional information:
✔ Always use freshly court fish.
✔ Remove as much of the blood line when fileting.
✔ Try keep filets a consistent size. This will ensure they cook evenly.
✔ Play around with the brine recipe. Other ingredients will bring out different flavors.
✔ Leave fish in brine over night if possible. I actually left mine for 48 hours.
✔ Don't over cook fish and remember that it will continue cooking after removed from the smoker.
✔ Smoked fish is great served cold on salads.
