Greek Traditional Spinach Feta Herb Pie (Mpatzina Me Spanaki)
Ingredients
For the filling
500 g baby spinach
Five fresh green onions thinly sliced.
One leak finely sliced.
Half a bunch of dill finely chopped.
Half a bunch of parsley finely chopped.
Half a bunch of spearmint finely chopped.
Two or three huge handfuls of celery leaves (optional)
250 or 300g of crumbled feta cheese.
Two eggs slightly beaten.
Ground black pepper to taste.
1/3 cup 75g olive oil.
2 tablespoons fine semolina .
Ingredients for the batter
2 cups 300g all purpose flour.
One cup 165g corn flour.
One cup 180g fine semolina.
1 teaspoon salt.
Half a cup 113g of olive oil.
200 g thick yogurt.
2 1/2 cups of water divided. The 2 cups of water is 519g. The half cup of water is 125g.
Olive oil for greasing the pan and sprinkling on top of the pie.
