The number of ingredients in the recipe is indicated for 1 kilogram of brisket.
For the recipe, we need the lower part of the brisket.
Rinse the brisket well and pat dry with paper towels.
For marinating, prepare the mixture:
- 20 grams of 0.5-0.6% nitrite salt.
If you decide to use nitrite salt 6.25%, then use 23 grams of table salt and 2 grams of nitrite salt 6.25%.
- Sugar 10 grams
- Ground black pepper 7 grams.
- Nutmeg - 4 grams.
- Thyme - 4 grams.
- bay leaf - 4 leaves
- Garlic - 3 cloves
Spread the resulting mixture evenly over the brisket and rub well.
Place the brisket in zipper bags.
Put 2 sprigs of rosemary in each bag.
Release the air and close the bag.
We put the packed brisket in the refrigerator for 5 days. Brisket bags should be turned over every day.
5 days later. The breast was well marinated.
Remove the brisket from the bag and rinse the spices under running water.
