The lunch table that day looked very nice with the beetroot leaves stir-fry (Mallum) and the beetroot curry made using coconut milk. The beetroot curry that cooked with big potato pieces, is a prevalent dish in our country and loved by all. When the sweet taste of the beetroot and the red colour get absorbed by the softly boiled potato pieces, it gives a very pleasant taste when biting in them, it gives you a very unusually sweet taste. Most of our Sri Lankan people add a cubed potato to the beetroot curry, maybe because they all love that unusual taste. The same goes for the beetroot leaves stir-fry as well. I truly love the sweet taste and the beautiful red and green colours of the beetroot that mix up together with the green beetroot leaves and the taste of coconut sambal. I used one stove to cook the beetroot curry while the Mallum(stir-fry) was cooked under low heat in the side stove.
I was feeling very tired, coming under this scorching heat after plucking the beetroots. It was very late by the time I came home, so quickly I started to cook lunch despite my tiredness. Then suddenly as a blessing in disguise, I was presented with a king coconut which was given to me by my brother who appeared out of nowhere with a bunch of king coconuts. Wow! such a cool relief. At a hot weather like this, a king coconut is such a heavenly gift. Even the next day my brother made a delicious drink with king coconut water. It was a very unusual drink mixed with red apple, green apple, pears and orange slices, together with king coconut water, beetroot juice and lime juice was indeed a thirst quencher with a delicious punch. it was such a sweet experience with each bite of different pieces of fruit and gave such a satisfying feeling as you were drinking many flavoured fruit juices at once. Anyway our family's best taste expert is my brother indeed
While drinking my brother's awesome and delicious juice, I made my brother's favourite dessert by using beetroot. It is a pudding that was made by using red velvet cake. The cake pudding was made by using red velvet cake made by mixing beetroot juice to get the red velvet colour naturally. I incorporated the fresh ground peanut and our familiar desiccated coconut flavour into the pudding. Not only my brother but also our elder aunty's younger daughter (our little sister) loves this pudding so much. The pudding was enjoyed by all of us when our elder aunty and little sister came to our place in the evening for a visit.
