Ingredients:
For Sambar Powder: (Serves 3)
• 3 pieces Hing cake (size equivalent to peppercorns)
• 6 Dried red chillies
• 2 teaspoons Channa dal
• 1 teaspoon Methi seeds (Vendayam)
• 1/4 cup Coriander seeds
• 1 teaspoon Black pepper
• 1 teaspoon Turmeric powder
• 1 small piece Jaggery (optional)
Coconut
For Sambar:
• Assorted Vegetables:
• Drumsticks
• Small onions
• Brinjal
• Carrot
• Potatoes
• Spring onion
• 1 tablespoon Sesame oil
• 1 tablespoon Coconut oil
• 2 Red chillies
• 1 teaspoon Mustard seeds
• 1 teaspoon Methi seeds powder (Vendayam powder)
• Curry leaves
• Tamarind paste
• Water
• Salt to taste
• Toor dal (cooked)
• Sambar powder (prepared earlier)
• Fresh coriander leaves for garnish
Instructions:
1. Prepare Sambar Powder:
• In a pan, roast Hing cake, dried red chillies, Channa dal, Methi seeds, coriander seeds, coconut,black pepper, and turmeric powder with a teaspoon of sesame oil until fragrant.
• Grind the roasted mixture into a fine powder. Optionally, add a small piece of jaggery while grinding for sweetness.
2. Prepare Vegetables:
• Wash and chop the assorted vegetables into bite-sized pieces.
3. Cooking Sambar:
• In a large pot, heat sesame oil and coconut oil.
• Add red chillies, mustard seeds, Methi seeds powder, and curry leaves. Allow them to splutter.
• Add the chopped vegetables and sauté for a few minutes.
• Mix in tamarind paste, water, cooked Toor dal, and salt to taste. Let it simmer until the vegetables are tender.
• Once the vegetables are cooked, add the prepared Sambar powder according to taste preference. Stir well to combine.
• Allow the Sambar to simmer for a few more minutes to let the flavours meld together.
4. Garnish and Serve:
• Garnish the Sambar with freshly chopped coriander leaves.
• Serve hot with steamed rice or idli for a comforting and delicious meal.
