Ingredients:
• 1 cup peanut butter
• ½ cup white sugar
• 1 large egg
• ½ tsp cinnamon
• ¼ tsp ginger
• ¼ tsp cloves
• ¼ tsp nutmeg
Method:
1. Preheat your oven to 325°F. Line a cookie sheet with parchment paper.
2. In a bowl, mix together the peanut butter, sugar, egg, and spices until well combined.
3. Use a tablespoon or a meatball scoop to portion the cookie dough onto the sheet. You can leave them round or gently flatten them with a fork.
4. Bake in the preheated oven for 15-20 minutes. Be careful not to overbake – you want them soft and chewy!
5. Let the cookies cool on the sheet for 5 minutes before transferring them to a rack or enjoying them warm.
6. Optional: Sprinkle with confectioners’ sugar or ice them for an extra sweet touch. Enjoy!
Makes 30 small cookies or 24 large cookies.
