Ingredients:
Haddi ka gosht (medium sized mutton pieces with bones): 125 grams
Arvi/Arbi (colocasia): 250 grams
Pyaaz (onion): 1 chopped
Tamatar (tomatoes): 2 chopped
Adrak lehsan ka paste (ginger garlic paste): 1 tablespoon
Haldi powder (turmeric powder): ½ teaspoon
Lal mirch powder (red chili powder): 2 teaspoons
Bareek namak (salt): 2 teaspoons
Tel (cooking oil): 2 tablespoons
Imli ka khatta (tamarind water): 1 cup (mutthi bhar pakki imli ko ek cup paani mein bhigokar khatta nikaliye)
Kari patta (curry leaves): ek mutthi (a handful)
Kata hua hara dhaniya (chopped coriander): ek mutthi (a handful)
Sabith hari mirch (whole green chilies): 2
Procedure:
1. Pressure cooker mein gosht, kati hui pyaaz, kate hue tamatar, adrak lehsan ka paste, haldi powder, lal mirch powder, namak, tel (oil) aur ½ cup paani (water) daliye.
2. Achhi tarah se milakar dhakkan dhaanp dijiye. Medium aanch par chaar se paanch siti (whistle) aane tak pakaiyye.
3. Dhakkan nikal kart tel chhootne tak bhuniye.
4. Arvi ko chheel kar lambai se do hisson mein kaat lijiye. Arvi ke pieces is mein daliye aur ½ cup paani dalkar dhakkan dhaanp dijiye.
5. Do seeti aane tak pakaiyye ke arvi gal jaaye.
6. Imli ka khatta daliye aur teen cup (3 cups) paani daliye, kari patta, kata hua hara dhaniya aur sabith hari mirchein daliye.
7. Paani mein ubaal aane tak medium aanch par pakaiyye. Dheemi aanch par 10 se 15 minute tak pakaiyye ke imli ki kachhi bu door ho jaaye.
