In this video, learn how to cook baby eggplants with ground spices, whole spice blends and tomato puree.
Ingredients:
10-12 baby eggplants
2/3 cup chopped onions
2 tbs ginger garlic paste
1 and half cup tomato purée
4-5 curry leaves
1 tsp panch phoron (Indian whole spice blend)
1 & half tsp turmeric powder
2 tsp red chilli powder
1 tsp each of cumin & coriander powder
1 & half tsp garam masala
2 tbs pickle masala (could be from any readymade pickle)
5 tbs oil
1/2 cup water
2 tsp sugar
Salt to taste (since masala from pickle used in the recipe already has salt, so adjust accordingly)
