Pecan Maple Sandies
Ingredients:
1 cup turbinado sugar
1/4 cup unsalted butter (softened)
1 large egg
1.5 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/4 cup maple syrup
1 cup chopped pecans
Instructions:
In a large bowl, use a hand mixer to beat the turbinado sugar and softened butter until light and creamy. Mix in the egg until fully incorporated. Add this dry mix to the wet mixture, blending until just combined. Stir in the maple syrup mix, then add chopped pecans by hand, ensuring they're evenly distributed.
Roll 2 tbsp of dough into small balls (about 1-inch in diameter) and place them on a parchment-lined baking sheet. Preheat your oven to 350°F. Bake the cookies for 10-12 minutes or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
