The industry term for the ammonium-infused beef filling commonly known as "pink slime" is "lean finely textured beef." It is made from leftover trimmings that are placed in a centrifuge and heated to separate fat from meat. The result is finely textured beef that is 95% lean. To kill off bacteria, the meat is blasted with ammonium hydroxide gas. Pink slime is not identified as an ingredient in product labels because it is 100% beef. Source: American Meat Institute
