This delightfully fresh Low Fat Raw Vegan (No Oil) Creamed Spinach recipe is super easy to make and packed with flavor, fiber and loads of nutrients. Great as a meal on its own or as a side dish.
Recipe:
6 oz. fresh spinach
3/4 cup chopped red onion
1/4 cup firmly packed chopped cilantro
Sauce
3/4 cup chopped zucchini
1/4 cup avocado
2 TBLS fresh lemon juice
1 small garlic clove
salt to taste
Blend sauce ingredients until smooth. Pour over spinach, cilantro and onion and mix until well coated. Enjoy!
Modifications:
Slightly higher fat version use 1/2 cup chopped zucchini and 1/2 cup of avocado instead of above mentioned amounts
If cilantro is not your thang, use fresh sweet basil instead ;-)
