Discussion with foraging chef Robin Kort on where to find truffles in the wild and truffle ecology in the Pacific Northwest. The one I'm holding is a perigord or French black truffle. Join her for an online Truffle cooking class where she walks you through her favourite three course Truffle menu from Swallow Tail Supper Club. Truffles are delicious but quite difficult to cook with and it really depends on the species you have bought or harvested as to what dishes they work with best. An Alba white truffle is one of the strongest whereas a perigord or Oregon black truffle is more mild and a totally different aroma, all truffles need to be paired with simple plain ingredients to make sure that the aroma of the truffle is dominant.
