It’s officially the first day of FALL!
This is my favorite fall treat, “Keto Pumpkin Cheesecake Mousse!”
Ingredients:
16 ounces cream cheese.
1 cup canned pumpkin (not filling).
3/4 cups of heavy cream.
1/2 Teaspoon vanilla extract.
1 Teaspoon Pumpkin Spice
Pinch of cinnamon
Instructions:
Get 2 separate bowls.
In a KitchenAid mixer blend cream cheese in 1 bowl until smooth.
Add 1/2 cup swerve to cream cheese & mix again.
Then add 1 cup canned pumpkin, 1 tsp pumpkin spice, 1/2 tsp vanilla extract & a touch of cinnamon to cream cheese mixture (blend well)
In separate bowl mix 3/4 cup of heavy whipping cream until nice & fluffy!
Once cream peaks & is fluffy, add heavy whipping cream to cream cheese mixture.
Blend together until smooth.
Cover & let mixture settle in fridge for about an hour.
Pull out & take what you want, ENJOY!
