Egg with ridge gourd is a south indian dish and it is delicious with rice or roti.
INGREDIENTS:
Ridge gourd(cubes) 1 cup
Oil 1 tbs
Mustard seeds ½ tsp
Cumin seeds ½ tsp
Onions(chopped) 1 cup
Salt To taste
Green chillies 2 nos
Curry leaves 1 spring
Ginger garlic paste ½ tsp
Turmeric powder ¼ tsp
Coriander powder ¼ tsp
Coconut milk 1 cup
Water ½ cup
Boiled eggs 2 nos
Coriander leaves ¼ bunch
METHOD:
1. Peel the skin of ridge gourd and cut into bigger cubes.
2. Heat oil in a pan, add mustard seeds, cumin seeds, onions, little salt, green chillies, curry leaves and saute it.
3. Add ginger garlic paste, turmeric powder and cook it for 1 min.
4. Add ridge gourd, coriander powder, little salt and saute it, cook for 4 mins with lid on it.
5. Add coconut milk, water and mix it.
6. Cut boiled egg into pieces and add to ridge gourd mixture and cook for 4 mins.cook it.
7. At last check for seasoning and transfer into a serving bowl, garnish with coriander leaves and mix it.
8. Now ridge gourd and egg curry is ready to serve with roti.
