'Patin masak tempoyak, or in english is 'Shark catfish cooked in fermented durian' is one of the most popular Malay dishes. This is an old recipe from a time when nothing (durian) was ever wasted and fermented for culinary use.
The most popular fish for this dish is the Patin, also known as pangasius, river catfish or shark catfish. It is can be found most of the rivers in Southeast Asia. Not only in river of Pahang (Malaysia) but also in Mekong basin as well as the Chao Phraya river.

Ingredients:
1 medium size of shark catfish
3 tablespoons of tempoyak a.k.a fermented durian
A bunch of 'kesum' leaves
1 'Asam keping' (Garcinia atroviridis) or use tamarind as replacement.
Salt and sugar
4 cups of water (pH9.0 Kangenwater)
Wet spice blend:
3 red chilies
9 bird eye chilies
1 inch fresh turmeric
