That UI is basic but customisable, while the security tools include face unlock and a fingerprint sensor. On the privacy side, you can choose which packages are installed and fiddle with a wide variety of permissions, including the MicroG settings. The Bootloader is locked by default but you can unlock this and re-lock if you like.
If you don't want to mess around with custom ROMs etc, the Simple Phone could be a respectable privacy-focused option. However, the specs aren't as impressive as many rivals at this UK price point. You don't get OLED tech, that Mediatek Helio G60 chipset is old and the camera tech is basic.
