Ingredients:
Dough:
100g Glutinous rice flour
30g Corn starch
35g Sugar
180ml Milk 🥛
2-3 drops Strawberry food color
15g Butter 🧈
Filling:
150ml Non-dairy whipping cream
50ml Dairy whipping cream
1-2 tbsp Condensed milk
3 tbsp Strawberry puree
Steps:
In a microwave-safe bowl, mix together glutinous rice flour, sugar, milk, and strawberry food color until dissolved.
Cover the bowl with plastic wrap and steam for 20 minutes or until the dough becomes translucent.
Add butter and mix until the dough is well combined. Knead until the dough becomes soft and stretchy. Let it cool for 45 minutes.
In a mixing bowl, add all filling ingredients and mix using a hand mixer until stiff peaks form.
Dust the working area and dough with more cooked glutinous rice flour or cornstarch to prevent sticking. Flatten the dough into circular shapes.
Pipe the filling in the center of each mochi wrapper. Pinch the four corners together, then pinch the remaining corners to seal.
Tap the bottom of each mochi with cooked glutinous rice flour or cornstarch. Gently brush off excess flour.
