Anything wrapped in bacon must be good, right? These were simple to make and would work well sliced up for appetizers. Add a dipping sauce to throw it over the top!
• 1 LB of Italian Sausage
• 1 LB of Bacon (Thin)
• 2 tsp of your favorite BBQ Rub
• 6 Mozzarella String Cheese
Fire up your pit or oven to 350 degrees. Cut a slit in the sausage being careful not to go completely through. Using your fingers press a pocket into the sausage and place the string cheese in the center. Mold the sausage around the cheese. Wrap each sausage in bacon and season each with the rub. Place on the smoker until the bacon is crispy and the internal temp reaches 165 degrees. Remove from the smoker to cool and slice into 1-inch pieces!
