Chipotle BBQ sauce
2 tbsp cooking oil
1 large yellow onion
1/3 cup malt vinegar
1/2 cup apple cider vinegar
1/2 cup water
2 cup ketchup
2 1/2 tbsp molasses
6 oz chipotle in adobo
1/3 cup soy sauce
1/3 cup dark brown sugar
2 tbsp honey
1 1/2 tbsp onion powder
2 tsp garlic powder
1 tsp black pepper

Meatloaf (makes 2 loaf pan meatloaves)
1 yellow onion (leftover from BBQ sauce)
2 1/2 tsp kosher or rosemary salt
2 tsp pepper
3 pounds ground beef (80/20)
2 tbsp Dijon mustard
2 large eggs
3 tbsp chopped parsley
1/4 cup sour cream
1 cup panko bread crumbs
1/2 cup buttermilk (sub with whole milk)
2 tbsp Worcestershire sauce
