[RECIPE BELOW] Semolina Pudding.
Listen, I know this isn't semolina pudding because it's missing the key ingredient... semolina!
But when I created this, it had this amazing sort of grainy taste and texture exactly like semolina pudding has. It is the closest thing I've had and therefore it's being called as such! It's very high in fat, it's sweet, and it's got that semolina feeling.
YOU WILL NEED A BLENDER OR STICK BLENDER FOR THIS RECIPE.

INGREDIENTS:
- 2 Eggs
- 1 Egg Yolk
- 3 tbsp Sweetener (I used Erythritol)
- 1/2 tsp Vanilla Extract
- 345ml (1 & 1/2 cups) Double/Heavy Cream
METHOD:
1. Add all ingredients to a large microwave safe bowl, mix really well, ensuring the eggs have been beaten well.
2. Place in the microwave, on a high heat, for 2 minutes. Remove and stir.
3. Repeat step 2 another 3 times (8 minutes in total)
4. Add all ingredients to a blender OR use a stick blender to mix the cooked mixture together until it's well combined. BUT it should still be a little bit "grainy" or "lumpy" to mimic semolina pudding.
5. Serve into 3 bowls and enjoy!
NOTE: YOU CAN DO THIS IN A SAUCEPAN - LARGE SAUCEPAN, MEDIUM HEAT, 10-12 MINUTES, STIRRING OFTEN UNTIL COOKED, BLEND.
