The tart tatin is a French classic dessert, beautiful to present, easy to make and utterly delicious.
Ingredients:
10 apples
300 ml water
100 g unsalted butter
150 g sugar
Juice of a half lemon
1 tsp cinnamon
250 gr puff pastry
100 gr sugar for the caramel
Instruction:
Using a 9-inch (23 cm) flat-sided cake pan
Preheat oven to 180°C (350°F)
Peel and quarter the apples
In a large pan bring to boil the water, sugar, butter, cinnamon and lemon juice..
Add the apples and let them apple cook for 20/25 minutes.
Pour 100 g of sugar in a pan and leave to caramelize
Arrange the apple slices in concentric circles on the bottom of the cake pan.
Press the apples tightly against each other (very important to be very squeezed against each other)
Roll out the pastry and cover the apples, tucking gently the edges inside the dish.
Poke holes all over to provide ventilation.
Bake for 45-50 minutes, until the pastry is golden brown
Let it cool and then invert into the serving platter
TIPS:
You can use also shortcrust pastry instead of puff pastry
Serve with a scoop of vanilla ice cream, it’s delicious!
