Anyway, in the movie Princess Diana and Chef Darren talk many times about one of Princess Diana's favorite dishes Crepes Soufflé but sadly Chef Darren never actually gets to make it for her in the movie. I wish I had made this delicious dish for Kristen Stewart when I met her in LA. I just know she would have enjoyed the dish as much as Princess Diana did.

In this video I share with you the original recipe that (the real) Chef Darren McGrady used to make for (the real) Princess Diana. It's a fabulous dish, I hope you make it at home and enjoy with your family and friends.

Crepes souffle d’abricots

Makes 8 portions

7 egg yolks
2 eggs
2 oz melted butter
5 fl oz milk
4 oz sugar
5 oz flour
20 fl oz cream

7 egg whites

3 cups apricot jam

Preheat the oven to 400 degrees F. Grease the ring molds and place in the oven for about 5-8 minutes to get hot.
Mix all of the ingredients together in a large bowl (except the egg whites and apricot jam) and fold in the whipped egg whites. Ladle into the molds and cook until risen and golden brown. 8-10 minutes for 4" molds, 15-20 minutes for 9" molds, 20-25 minutes for casserole dish.

Heat the apricot jam and strain through a sieve. Place one of the shuffles onto a serving dish, ladle over some hot jam and place the second one on top. Ladle over more jam. Serve immediately.
