today we have made baigan bharta which is an Indian dish.Baingan Bharta is best enjoyed with roti or parathas.Baigan bharta is most often grilled, minced eggplant stewed with chopped tomato, browned onion or shallots, ginger, garlic, cumin, and topped with lime or lemon juice, fresh cilantro (coriander leaves) and sliced fresh green chili pepper. Depending on region and personal tastes, ghee (clarified butter) may be used in preparation of the dish.

Discription
Make cuts on the baigan then spread oil all over it tgen grill then until it's outer skin can be removed easily
Then after grilling remove the outer skin and smash it
Ingridients
2 baigans
2 chopped green chillies
1 sliced onion
Half chopped tomato
11-12 green peas
Required amount if coriander
3-4 garlic and a piece of ginger (smashed)
Haldi 1/2 tsp
Red chilli powder 1 tsp
Garam masala 1/2 tsp
Coriander powder 1/2 tsp
Procedure
Add oil in a pan the add cumin seeds and rai seeds in it then add the chopped green chillies and onion into it then cook until the onion becomes transparent then then add the chopped tomato and green peas and cook it for 3-4 minutes then add the haldi, red chilli powder, coriabder powder , garam masala add some coriander and mix it well then add some kasuri methi then add the baigan and salt according to taste and some coriander then mix it and cook for 5 minutes
