Ingredients:
Four medium size parsnips, peeled, ½-inch dice
Two cups of cream
One cup of water, additional water for blending to adjust thickness
Four to five tbsp of unsalted butter
One tsp Kosher salt, or to taste
Process:
1. Place the parsnips, cream, and water into the saucepan on medium heat. Bring the liquid to a simmer, and cook the parsnips until they have no resistance when tested with a knife. Cooking time, 45-60 min.
2. Transfer the parsnips and thickened liquid to a blender. Begin blending on low speed and gradually increase the speed. Blend for about 10 minutes.
3. During blending, add the butter and season with salt. Continue blending until the puree is very smooth smooth.
4. Taste and add salt if necessary. Check the consistency and adjust with additional water.
5. Garnish with herbs and serve with fish, chicken etc.
