My today's recipe is another budget friendly (less than 2usd good for 5pax) healthy and delicious recipe, "Mung Beans Stew w/ Pork Cracklings (Chicharon as we Filipino call it) & Bitter Gourd Leaves". Here are the ingredients i used:
Mung Beans (Monggo)
Bitter Gourd Leaves (Dahon ng ampalaya)
Chicharon (Pork Cracklings)
tomatoes, chopped
2 cloves garlic, minced
1 red onion, diced
salt and pepper to taste
oil for sauteeing
water
Note: They said you don't need to soak the monggo or mung beans, just wash and remove from packaging and cook right away but i prefer to do it the way my mother taught me how to cook it.
