This is a full commentated video on acquiring all the trophies / achievements in just over 2 hours in the Enhanced Edition! The full unedited run is just over 3 hours with deaths included, but with this a little more optimised and without deaths, i'm fairly confident we could get this to below 2 hours, though i'm not sure if I will be running this again after this one.

The grindiest trophy for a quick platinum would usually be the SUGAR RUSH trophy, I figured out a trick (PS5) to get this in 5 minutes rather than 30+ minutes of hard grinding. I'll make a video on it and link it down below once done.
