Whoever said that Veg Kebabs are not delicious is in for a surprise! These Veg kebabs are not only delicious but also quite like the real deal in their taste. The 3 veg kebabs I am sharing with you today are Rajma Galouti, Shami Kebab and Corn Kebab or Makai kebab.

Recipe :
Rajma Galouti Kebabs
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 3-4
Ingredients:
2 cups boiled Red Kidney Beans
15 Cashew Nuts
2 Chironji
1 tbsp Poppy seeds
1/tsp Caraway seeds
5 Green cardamoms
2 Black cardamoms
4 Cloves
2” Cinnamon
1 tsp Kewra water
2 tbsp Ghee
1” Ginger chopped
10 cloves Garlic chopped
3-4 Green chillies finely chopped
4 tablespoons Mawa (khoya) grated
1 tsp White pepper powder
½ cup fried brown onion
Salt to taste
Method:
Dry roast the poppy seeds, cashew nuts and chironji along with the whole spices till fragrant and lightly coloured. Grind to a smooth powder. Add fried onions and a little water ad grind to a smooth paste.
Heat 1 tbsp ghee in a pan. add chopped ginger, garlic and green chilies and sauté till golden and fragrant. Add khoya and sauté till the khoya is soft. Add the mixture to the spice paste and blend further to make a smooth paste.
Remove the paste to a pan. Add the boiled rajma, red chilli powder, white pepper powder and mix well. Cook till the rajma is all mashed and the mixture starts coming together like a ball. Remove from heat and add the kewra water. Allow to cool down. Shape the kebabs and cook over medium heat in a pan till the kebab are golden, adding a little ghee at a time. Serve hot with chutney.
Shami Kababs
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 3-4
Ingredients:
2 cups soaked Bengal Gram (kala chana)
½ cup chopped onions
1 tbsp chopped garlic
1tbsp chopped ginger
2 black cardamoms
1 tsp cumin seeds
2” cinnamon
5-6 cloves
½ cup chopped onion
2 tbsp chopped coriander leaves
2 tbsp lemon juice
Salt to taste
Oil as needed
Method:
Pressure cooked the drained chana with chopped onions, ginger, garlic, whole spices, salt to taste, ½ cup water for 4-5 whistles. Cool and grind to a smooth paste. Add chopped onions, chopped coriander, red chilli powder, garam masala powder, lemon juice, mix well and shape into kebabs and cook over medium heat in a pan till the kebab are golden, adding a little ghee at a time. Serve hot with chutney.
Corn Kebab
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 3-4
Ingredients:
2 cups sweet Corn
1 Boiled potato
2 tbsp chopped Coriander
Mint
Cardamom powder
Khoya
Powdered Spices
Method:
Boil the corn with ½ cup water and ½ tsp turmeric powder, chopped ginger till well cooked. Remove, drain, cool and grind to a coarse paste. Grate 2 boiled potato add to the corn paste.
Grind together the cardamoms, mace, white pepper powder and a little salt.
Heat a little ghee in a pan. add the caraway seeds and allow to splutter. Add the khoya and cook over low heat till the khoya is lightly pink. Add the chopped green chilies, the corn past eand mix well. Add th cashew paste and mix well. Add the powdered spices and the soaked saffron and cook till the mixture starts coming together like a ball. Remove from heat and cool doen slightly. Add chopped coriander and mix well. shape into kebabs and cook over medium heat in a pan till the kebab are golden, adding a little ghee at a time. Serve hot with chutney.
