Mediterranean Chicken Baked Rice 🍗🍛🤤
We can’t go past @campbellskitchenau when it comes to Chicken Bone Broth! It’s a great alternative to traditional stock and is full of nutrients!
Ingredients:
120g Chicken Breast (weighed raw)
1 tsp Italian Herb Mix
60g White Rice (weighed uncooked)
1 Clove Garlic, minced
25g Olives
30g Red Onion
50g Cherry Tomatoes
125ml Campbell’s Bone Broth from Free Range Chicken
25g Feta Cheese
Lemon Wedges
Method:
1. Preheat the oven to 180°C. Season chicken with salt, pepper, garlic and Italian herb mix.
2. Add rice, olives, chopped onion, feta (if listed), tomatoes and broth to the pan. Top with chicken and cook for 20-25 minutes or until the liquid is absorbed. To serve, top with a squeeze of lemon.
